Trim the ends of the green beans and cut them into 2-inch pieces.
Heat vegetable oil in a large skillet over medium-high heat.
Add chopped onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and grated ginger; cook until fragrant, about 1 minute.
Add diced bell pepper and tomato; cook until softened, about 2-3 minutes.
Add the green beans and stir-fry for 5-7 minutes until tender-crisp.
Season with soy sauce, salt, black pepper, and cayenne pepper; mix well.
Stir in lime juice and peanut butter until combined.
Remove from heat and garnish with chopped cilantro.
Serve warm as a side dish.
