4-5 tbsp boiling hot water
1/3 tsp salt
1/2 tbsp soy sauce
1/2 tbsp Chinese black vinegar

Turn on the heat and bring water to a boil.

In a bowl, combine 280g of all-purpose flour and 1/2 tsp of salt, whisking to incorporate.

Add 1 cup of diced onion, 1/3 cup of minced garlic, and 2.5 tbsp of minced ginger, stirring for about 10 minutes.

Pour in 1/3 cup of chicken stock and deglaze the wok.

Season with 2 tbsp of soy sauce, 1.5 tbsp of oyster sauce, 1.5 tbsp of Chinese cooking wine, 1.5 tsp of sugar, and black pepper to taste, mixing thoroughly.

Add the mixture to 500g of ground pork and mix well, stirring in one direction for 3-5 minutes to develop texture.

Add diced scallion and sweet corn to the filling and mix thoroughly.

Roll the rested dough into a long log and divide into 40 pieces, each weighing 11-12 grams.

Dust with flour and cover with a damp towel to prevent drying.

Flatten one piece of dough, then roll it into a round wrapper about 2.5 inches in diameter.

Place 1.5 tbsp of filling in the center and fold into a leaf shape, pinching pleats to seal.

Wet a cheesecloth and place it in the steamer, then arrange the dumplings inside.

Fill the pot with cold water, place the steamer on top, and turn the heat to high.

Prepare a dipping sauce with 2 tbsp of pure peanut butter, 2 tsp of pure sesame butter, 1 tbsp of sugar, and 4-5 tbsp of boiling hot water, adjusting for consistency.
