In a large bowl, add 500g of ground beef.

Add 80g of grated onion and squeeze out the liquid first.

Stir in 6g of freshly chopped parsley.

Add 10g of grated garlic.

Add 1 tsp each of cumin, coriander, and paprika, plus 1/2 tsp each of salt and pepper.

Mix everything by hand until the spices are well combined.

Wet your hands slightly and shape the meat into your desired size.

Heat a splash of oil and fry the kofta in a hot pan until seared and golden on all sides.

Remove the kofta from the pan.

In the same pan, stir in 10g of grated garlic and add chopped chili pepper.

Add 30g of tomato paste and stir until fragrant.

Add 300g of diced tomatoes and cook until softened.
