Gather equipment: knife, strong mixing spoon, peeler, cutting board, storage containers, food processor, and two pots.

Prepare the pot for boiling by adding 4 whole peeled carrots, 2.5 handfuls of salt, 2.5 handfuls of black pepper, and about 10 handfuls of sugar. Add 3 halved onions for flavor.

Fill the pot with water to about a third full and cover it to preheat until boiling.

While waiting for the water to boil, prepare the fish mixture by grinding 10 medium-sized onions in the food processor until finely chopped.

Add 10 eggs to the onion mixture, one egg per pound of fish.

Incorporate 6 handfuls of salt, 2.5 handfuls of black pepper, and 14 handfuls of sugar into the mixture. Optionally add a spoon of baking powder for fluffiness.

Mix the onion and egg mixture thoroughly before adding the fish.

Add 10 lbs of ground white fish and 5 lbs of pike to the mixture, ensuring it is well combined. If the fish is frozen, consider dividing it into 2 lb packages for easier mixing.

Start mixing with a strong spoon, then switch to hand mixing to ensure all ingredients are well combined and no large pieces remain.

Gradually add 3/4 of a 1 lb box of matzah meal to the mixture, then add the remaining matzah meal as needed to achieve the right consistency for forming balls.

Once the pot of water is boiling, form the gefilte fish mixture into balls and place them into the boiling water.
