2 stalks celery, diced
1/2 cup red bell pepper, diced
1 red onion, diced
1 jar Mediterranean flavored gefilte fish
1 matzah, crushed
1 egg
1/2 cup light mayonnaise
kosher salt
black pepper

Dice 2 stalks of celery and add to a bowl.

Dice 1/2 cup of red bell pepper and add to the bowl.

Dice 1 red onion and add to the bowl.

Crush 1 matzah and add it to the bowl with the other ingredients.

Add 1 jar of Mediterranean flavored gefilte fish to the bowl.

Add 1 egg and 1/2 cup of light mayonnaise to the bowl.

Season with kosher salt and black pepper.

Mix all the ingredients together using your hands until well combined.

Form the mixture into 1/4 cup patties and place them on a greased cookie sheet.

Refrigerate the patties for about 30 minutes to set.

Pan-fry the patties for about 3 to 4 minutes on each side in a few tablespoons of oil, up to half an inch of oil, or alternatively bake them in the oven.
