Mix the water, sugar, and yeast together, and leave it for until the yeast gets activated (5 to 10 mins).

Add 2 3/4 cups of the flour, salt, and olive oil to the mixture.

Stir until a dough is formed.

Knead the dough until smooth and elastic.

Cover the dough in a bowl with plastic wrap and let it rise until doubled in size (at least 1/2 hr).

Gently take out the dough onto a lightly floured work surface, knead it, and divide it into equal pieces.

Make each piece into a thick disk and cover them with a kitchen towel or plastic wrap until ready to roll.

Using a rolling pin, roll one piece into a circle 6 inches wide and about a quarter inch thick, lifting and turning the dough frequently to prevent sticking.

Let the rolled dough rest for 20-30 minutes or until they rise and puff slightly.

Preheat the oven to 250°C.

Place the rolled-out pitas in the oven and bake for about 5 mins until they puff up.

For stovetop baking, warm a cast iron skillet over medium-high heat, drizzle a little oil, and bake the rolled-out pita for 30 seconds until bubbles form, then flip and cook for 1-2 minutes on the other side.
