Lemon juice offers acidity with a fresh flavor.
Slice bitter melon thinly and remove seeds.
Sprinkle salt over the slices and let sit for 30 minutes to draw out moisture.
Rinse the bitter melon slices under cold water and pat dry with a towel.
Heat oil in a pan over medium heat until shimmering.
Add mustard seeds and cook until they start to pop, about 1-2 minutes.
Stir in fenugreek seeds, turmeric, and red chili powder, cooking for another minute.
Add the bitter melon slices and mix well to coat with the spices.
Cook for 5-7 minutes until the bitter melon is tender but still crisp.
Stir in sugar, vinegar, garlic, ginger, and curry leaves, mixing thoroughly.
Remove from heat and let cool to room temperature.
Transfer the mixture to a clean jar and seal tightly.
Allow to pickle for at least 24 hours before serving.
