Step 1: Preparation - Take capsicum and wash it properly. Then cut and take out its seeds. Then cut it like sliced rings and keep it aside.

Step 2: Prepare the Filling - In a bowl, take 3 boiled potatoes and add medium chopped onion, 2 spring onion, 2 chopped green chilli, 1 cup chopped coriander leaves, 1/2 teaspoon black pepper, 1/4 teaspoon turmeric powder, 1 teaspoon chilli flakes, 1 teaspoon chaat masala, 2 tablespoon corn flour, and salt to taste. Then mix it properly.

Step 3: Capsicum Filling - Take a small portion of the mixture and start filling in the capsicum rings. Make sure to press hard and take out extra from the surface.

Step 4: Air Frying - Preheat your air fryer to 205°C for 5 minutes. Once preheated, place parchment paper in the air fryer basket and apply olive oil. Then place capsicum rings one by one. Set the air fryer temperature for 12-15 minutes at 180°C. After 6-7 minutes, open the basket and apply olive oil on top surface. Let it cook for another five minutes, then top with mozzarella cheese and chilli flakes, and let it cook for another 2-3 minutes.

Step 5: Serve - Serve the crispy air fryer stuffed peppers with your favorite chutney or dip.
