1

Prepare the pie crust by blind baking it until golden brown and cooled.

2

Wash and hull 2.5 pounds of strawberries. Split them in half, setting one half aside in a bowl.

3

In a medium saucepan, add the other half of the strawberries, 0.25 cups of water, and 1 tablespoon of lemon juice.

4

Add 0.75 cups of granulated sugar to the saucepan and mash the strawberries with a potato masher or fork.

5

In a small bowl, mix 0.25 cups of water with 5 tablespoons of cornstarch to create a slurry.

6

Place the saucepan on medium heat and bring the mixture to a boil, stirring occasionally.

7

Once boiling, reduce the heat to medium-low and add the cornstarch slurry, stirring constantly for about 5 minutes until the mixture thickens and becomes translucent.

8

Remove the saucepan from heat and let the mixture cool for 10 minutes.

9

Pour the cooled strawberry mixture over the reserved fresh strawberries and mix to coat them.

10

Pour the filling into the baked pie crust and refrigerate for at least 3 hours until chilled and set.
