Put 2 cups of brown sugar in the mixer.
Add 2 cans of coconut milk to the mixer and mix at a slow speed.
Add 2 eggs to the mixture.
Add 5 ounces of raisins to the mixture.
Sieve the batter to avoid lumps after transferring it to a pot.
Switch on the heat to medium and keep stirring the batter until thickened, about 10-15 minutes.
Check the consistency; it should be thick like mashed potatoes and you should see the bottom of the pan when stirring.
Sprinkle in the raisins and cashews into the thickened batter.
Transfer the batter into a 9.5-inch baking dish and smooth out the surface.
Sprinkle poppy seeds evenly over the top of the semolina pudding.
Bake in the oven at 350 degrees Fahrenheit for about 30-45 minutes until golden brown on top.
Let the semolina pudding cool completely before slicing.
