Cashew Chicken

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup cashews
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp cornstarch
1 tbsp vegetable oil
1/2 cup bell peppers, sliced
1/2 cup onion, sliced
2 cloves garlic, minced
1 tsp ginger, minced
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
1/4 cup green onions, chopped for garnish

In a bowl, combine the chicken pieces with soy sauce, oyster sauce, cornstarch, and black pepper. Marinate for at least 30 minutes.

Heat vegetable oil in a slow cooker.

Add the marinated chicken to the slow cooker and stir-fry until browned and cooked through, about 5-7 minutes.

Remove the chicken from the slow cooker and set aside.

In the same slow cooker, add the garlic, ginger, bell peppers, and onion. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Return the chicken to the slow cooker and add the cashews and red pepper flakes (if using). Stir to combine and heat through for another 2-3 minutes.

Taste and adjust seasoning if necessary.

Remove from heat and garnish with chopped green onions before serving.
