3 green onions
1 tbsp soy sauce
1 tbsp oyster sauce
1/2 tsp dark soy sauce
1 tbsp sugar
1/4 tsp white pepper
1 tbsp toasted sesame oil
4 tbsp water
1 tbsp corn starch
1 tbsp chicken bouillon powder
1/2 cup raw cashews

Cut 450 g of boneless skin on chicken thighs into bite-sized pieces.

Marinate the chicken with 1/2 tbsp soy sauce, 1/2 tbsp Shaoxing wine or mirin, 1/4 tsp white pepper, 1/2 tsp baking soda, 1 tbsp corn starch, and 1 tbsp neutral oil. Massage the chicken until well coated.

Let the marinated chicken rest in the fridge while preparing the vegetables.

Cut half an onion into bite-sized pieces and chop bell peppers to make about 2 cups.

Smash and finely chop 4 cloves of garlic.

Grate about half a teaspoon of ginger.

Slice 3 green onions into long strips and thinly slice the white parts.

In a small container, mix 1 tbsp soy sauce, 1 tbsp oyster sauce, 1/2 tsp dark soy sauce, 1 tbsp sugar, 1/4 tsp white pepper, 1 tbsp toasted sesame oil, 4 tbsp water, 1 tbsp corn starch, and 1 tbsp chicken bouillon powder to create the sauce.

In a large wok or pan, heat 2 tbsp of oil over medium heat and add 1/2 cup of raw cashews. Roast for about 2 to 3 minutes until they are deep dark brown, then remove them from the pan.

Increase heat to high and add the marinated chicken to the same wok. Spread it out and let it sear for about 1 to 2 minutes until golden brown.

Stir the chicken and cook for another 2 to 3 minutes until cooked through. Check doneness by cutting the largest piece in half.

In the same wok, add the garlic, ginger, and white parts of the green onions to the chicken fat and sauté for about 1 minute.

Add the onions and bell peppers to the wok and stir-fry for about 1 minute.

Return the cooked chicken to the wok and toss everything together for about 30 seconds.

Pour in the prepared sauce, stirring until it thickens.

Turn off the heat and add the green onions and cashews back into the dish.
