Ingredients

  • 4 cups chicken broth
  • 2 packs ramen noodles
  • 1 lb chicken breast, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp chili paste
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup corn (optional)
  • 1/2 cup bok choy (optional)
  • 1 soft-boiled egg (optional)

Instructions

  1. 1In a large pot, heat the sesame oil over medium heat.
  2. 2Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant.
  3. 3Add the sliced chicken breast to the pot and cook until browned, about 5-7 minutes.
  4. 4Stir in the soy sauce and chili paste, mixing well to coat the chicken.
  5. 5Pour in the chicken broth and bring to a boil.
  6. 6Once boiling, add the ramen noodles and cook according to package instructions, usually about 3-4 minutes.
  7. 7If using, add the corn and bok choy in the last minute of cooking.
  8. 8Season with salt and black pepper to taste.
  9. 9Ladle the ramen into bowls and top with chopped green onions and a soft-boiled egg if desired.
  10. 10Serve hot and enjoy your spicy chicken ramen.
