Add 1.5 cups of milk into a large bowl and let it come to room temperature or warm.

Add 2 tablespoons of lemon juice to the milk and mix; set aside for about 10 minutes to curdle and make buttermilk.

After 10 minutes, the milk will have curdled. Add 1/4 cup plus 2 tablespoons of butter and 1 teaspoon of vanilla extract to the buttermilk.

Mix all the wet ingredients together using a wooden spoon or whisk and set aside.

In another bowl, add 2 cups of all-purpose flour, 4 teaspoons of baking powder, 1/4 cup of castor sugar, and 1 teaspoon of cinnamon powder (optional). Mix the dry ingredients well.

Add 1/3 cup of hot water to the batter and mix it in until smooth.
