1/2 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
440 grams (2 cups packed) brown sugar
1/2 cup buttermilk
1 cup vegetable oil
1 cup applesauce
4 large eggs

1

Preheat the oven to 350°F.

2

In a large bowl, combine 360 grams of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 2 teaspoons of ground cinnamon, 2 teaspoons of ground ginger, 1/2 teaspoon of ground cloves, and 1/2 teaspoon of ground nutmeg. Whisk together until evenly mixed.

3

In another large bowl, weigh out 440 grams of packed brown sugar, breaking up any clumps. Add 1/2 cup of buttermilk, 1 cup of vegetable oil, 1 cup of applesauce, and 4 large room temperature eggs. Whisk these wet ingredients together until combined. Add 1 teaspoon of vanilla extract and mix again.

4

Combine the wet ingredients with the dry ingredients, stirring until just combined. Be careful not to overmix to avoid a dense cake.

5

Distribute the batter evenly into two greased and floured 9-inch cake pans. Bake in the preheated oven for 30 minutes or until the centers are springy to the touch.

6

While the cakes are baking, prepare the cream cheese frosting by creaming together 1 cup of room-temperature unsalted butter and 8 ounces of softened cream cheese until smooth. Gradually add in 6 cups of powdered sugar in batches, mixing on low until fully combined. Add 1/2 teaspoon of vanilla extract and mix again.

7

Once the cakes are done, let them cool before assembling. Place one layer on a serving plate, add 1 cup of frosting on top, and spread it out evenly. Add the second layer on top.

8

Cover the entire cake with the remaining frosting, using a swooping motion to create a decorative finish.
