Preheat the oven to 225°F (107°C).
Measure 1 cup (230g) of full-fat cottage cheese into a food processor.
Process the cottage cheese for about 20 seconds, then scrape down the sides.
Process again for another 20 seconds or until the consistency resembles cream cheese frosting.
Prepare a cookie sheet with a silicone mat.
Using a number 50 disher, scoop the cottage cheese mixture onto the silicone mat, filling each scoop slightly past full to create 12 chips.
Bake in the preheated oven for 40 minutes.
Rotate the tray to account for hot or cold spots in the oven and bake for another 40 minutes.
Turn off the oven and let the chips cook with residual heat for an additional 20 minutes.
Remove the chips from the oven; they should be firm and easily peel away from the mat.
For pork rind chips, add 1 tablespoon of ground barbecue pork rinds to the processed cottage cheese and blend until smooth.
Scoop the pork rind mixture onto the silicone mat using the number 50 disher and bake for the same time as the plain chips.
For sweet chips, add 1 tablespoon of keto Chow (chocolate peanut butter flavor) to the processed cottage cheese and blend until smooth.
Scoop the sweet mixture onto the silicone mat and bake for the same time as the plain chips.
For cheesy chips, add 1 tablespoon of cheddar powder to the processed cottage cheese and blend until smooth.
For ranch-flavored chips, add 1/2 teaspoon of Ranch powder to the processed cottage cheese and blend until smooth.
For pecan flour chips, add 1 tablespoon of pecan flour to the processed cottage cheese and blend until smooth.
