For boba, heat 3½ tbsps water, add 2 tbsps brown sugar and cook until the sugar dissolves. Add 1 tsp tapioca flour and cook until the mixture thickens. Switch off the heat.

Add cocoa powder and remaining tapioca flour and knead to soft dough. Divide the mixture into equal small portions and roll into balls. Dust tapioca flour.

Boil water in a deep nonstick pan. Add the tapioca pearls and cook on medium heat for 20 minutes. Switch off the heat and set aside for 30 minutes in the same liquid.

Heat a pan. Strain the pearls, add ¼ cup water and remaining brown sugar and cook on medium heat for 5 minutes. Transfer in a bowl and allow to cool.

For boba tea, add tea bags in 1 cup hot water and set aside for 5-10 minutes. Divide the boba mixture equally into serving glasses, add prepared tea, ice cubes and milk and serve chilled.

For blue pea boba, heat blue pea water in a shallow pan, add castor sugar and cook until it coats the back of the spoon. Allow to cool. Transfer the blue pea mixture into serving glasses add boba, ice cubes, lemon slices and soda. Serve chilled.
