Chicken Majboos

1 whole black cardamom
1 mace
1 star anise
5 green cardamoms
10 cloves
1 cinnamon stick
0.5 teaspoon black peppercorns
3 bay leaves
3 medium onions
1 kg chicken
3 medium tomatoes
200 ml tomato puree
1.5 teaspoons cumin powder
1 teaspoon garam masala
0.5 teaspoon turmeric
3 chicken stock cubes
1 teaspoon salt
5-6 whole green chilies
2 dried lemons
1 kg basmati rice
5 cups hot water

Heat 0.5 cup oil in a pan.

Add whole spices: 1 black cardamom, 1 mace, 1 star anise, 5 green cardamoms, 10 cloves, 1 cinnamon stick, 0.5 teaspoon black peppercorns, and 3 bay leaves. Fry for a few seconds.

Add 3 finely sliced medium onions and fry until transparent.

Add 10 cloves of garlic (finely chopped), 2 pieces of ginger (finely chopped), and green chili to taste. Fry for 1-2 minutes.

Add 1 kg whole chicken and fry until it changes color to white.

Add 3 medium tomatoes (chopped) and 200 ml tomato puree. Mix well.

Add spices: 1.5 teaspoons cumin powder, 1 teaspoon garam masala, 0.5 teaspoon turmeric, 3 chicken stock cubes, and 1 teaspoon salt. Mix well.

Add 5-6 whole green chilies and 2 dried lemons (optional).

Cook for 10-15 minutes on medium flame, covered.

Soak 1 kg basmati rice for 30 minutes.

Add 5 cups of hot water to the chicken mixture and mix well.

Check for seasoning and adjust salt or spices if necessary.

Cover and cook on medium flame until water dries up, then reduce flame to low and cook for another 10-15 minutes until rice is steamed.
