Chicken Majboos

Chicken 1 and half kg
Cooking oil 1/2 cup
Onion chopped 1 large
Garlic chopped 5 cloves
Cinnamon sticks 2 pcs
Cardamom 10 pcs
Pepper corn 1 tsp
Bay leaves 3 pcs
Dry lemon 3 pcs
Cloves
Salt to taste
Arabic masala 1 tbsp
Turmeric powder 1 tsp
Hot water 2.5 litters
Basmati rice 4.5 cups soaked before 30 minutes
Cardamom powder 1 tsp
Black pepper 1 tsp
Hot water 2 cups (as required)
Pinch saffron with 3 tbsp water soaked before 20 minutes
Pinch saffron with 3 tbsp lemon juice soaked before 30 minutes
Pinch cardamom powder
Pinch black pepper
Heat oil 1/3 cup
Onion chopped 1 large
Boiled chickpeas 250g
Raisins 1 cup (soaked before 1 hour)
Cinnamon powder 1 tsp
Cardamom powder 1 tsp
Black pepper 1 tsp
Salt 1 tsp
Hot water 1/3 cup

Heat oil in a pot and add chopped onion and garlic, sauté until golden.

Add chicken and cook until browned.

Stir in cinnamon sticks, cardamom, peppercorns, bay leaves, dry lemon, cloves, and salt.

Add turmeric powder and Arabic masala, mix well.

Pour in hot water and bring to a boil.

Add soaked basmati rice, cover, and cook until rice is tender.

For the chickpeas masala, heat oil in a separate pan, add chopped onion and sauté.

Add boiled chickpeas, raisins, cinnamon powder, cardamom powder, black pepper, and salt, cook for 5 minutes on low heat.

Serve the chicken on top of the rice, garnished with chickpeas masala and fried onions.
