Rinse the dehydrated seamoss under running water to remove sediment and sand.
Place the rinsed seamoss in a bowl, cover with water, and wash with lime or lemon juice.
Let the seamoss sit in the lime or lemon juice water overnight, then rinse again.
Let the seamoss sit in room temperature water overnight to gelatinize.
Grate a pinch of whole nutmeg and tonka bean for flavor.
In a blender, add about 1 cup of seamoss gel.
Add the steeped cinnamon, bay leaf, cardamom, and the milk of your choice.
Add sweetened condensed milk or another sweetener to taste.
Add a pinch of sea salt to enhance flavor.
Add vanilla essence and mixed essence to the blender.
Add a pinch of nutmeg and tonka bean to the mixture.
Blend all ingredients until well mixed.
Let the mixture sit for 5 minutes to thicken before serving.
