Prepare a full chimney of Kingsford charcoal for cooking.

Gather ingredients: flank steak, carrots, sweet onion, garlic, green peas, red potatoes, brisket and steak rub, cornstarch, better than bouillon beef broth, Worcestershire sauce, balsamic vinegar, and olive oil.

Use a 10-inch Lodge Dutch oven for cooking.

Preheat the Dutch oven by placing it over the hot coals.

Add a little olive oil to the Dutch oven to facilitate cooking.

Brown the flank steak in the Dutch oven until it is nicely browned.

Cut the sweet onion into chunks, cutting with the grain, and add it to the pot to brown with the beef.

Add the red potatoes to the pot after the onions have browned.

Cover the Dutch oven with a lid to capture steam and speed up cooking.
