1 kg bone-in beef
1 cup oil
3 medium onions
1.5 tbsp garlic paste
1.5 tbsp ginger paste
2 tsp red chilli powder
2 tsp salt
1 tsp turmeric powder
1.5 tbsp crushed roasted coriander
2 tsp red chilli flakes
1 cup water
3 medium tomatoes
1 cup yogurt
10-12 pcs dried plum
8 small green chilies
1/4 tsp nutmeg
1/8 tsp mace powder
1/2 kg potato
1/3 cup mint
1/3 cup cilantro
4 liters water
2 tbsp salt
3 pcs black cardamom
2 pcs cinnamon
3 flowers star anise
1 tsp cumin
2 leaves bay leaf
1 kg parboiled rice
2 tbsp oil
tomato slices
lemon slices
2 pinches yellow food color
1 tsp Kewra water

Prepare Beef Korma by heating oil and sautéing spices for 1 minute.

Add sliced onions and sauté until golden brown.

Mix in bone-in beef, garlic paste, and ginger paste; cook for 2 minutes.

Add red chilli powder, salt, turmeric powder, crushed roasted coriander, and red chilli flakes; cook for 2 minutes.

Add water, cover, and cook for 20 minutes, stirring after 10 minutes.

Add chopped tomatoes, yogurt, dried plums, and green chilies; mix well and cook for 5 minutes.

Add potato and cover; cook for 15 minutes, stirring every 5 minutes.

Mix in chopped mint and cilantro, then turn off heat and set aside.

Boil water with salt, black cardamom, cinnamon, star anise, cumin, and bay leaves.

Add soaked parboiled rice and cook for 13-15 minutes until 90% done; strain rice.

Prepare biryani by adding oil to a pot, layering half of the rice, then the beef korma, followed by the remaining rice.

Top with tomato and lemon slices, chopped cilantro, and mint, along with yellow food color mixed in Kewra water.

Cover and cook on very low heat for 10 minutes, then gently mix and serve with raita.
