Sesame Peanut Noodles

brown rice udon noodles
snow peas
2 tbsp peanut butter
2 tbsp rice vinegar
1 tbsp tamari
1 tbsp tahini
crushed red chili flakes
2 cloves garlic
warm water
3 tbsp toasted sesame seeds

Cook brown rice udon noodles according to package directions for 8 to 10 minutes.

Add snow peas to the pot with the noodles about 1 minute before draining.

Drain the noodles and snow peas and let them cool.

In a bowl, combine 2 tbsp peanut butter, 2 tbsp rice vinegar, 1 tbsp tamari, 1 tbsp tahini, and a pinch of crushed red chili flakes.

Add 2 cloves of minced garlic to the sauce mixture and whisk together.

If the sauce thickens too much, add a little warm water to loosen it.

Once the sauce is at the desired consistency, add the cooled noodles and snow peas to the bowl.

Add about 3 tbsp toasted sesame seeds and any prepped vegetables to the bowl.

Mix everything together, ensuring the noodles are well coated with the sauce.
