Sesame Peanut Noodles

1/2 cup salted peanuts
1 habanero, minced
2 scallions, sliced
1/2 tsp ginger, grated
1/4 cup creamy peanut butter
1 tbsp sesame seeds
2 tbsp sesame oil
1 tbsp rice vinegar
2 tbsp soy sauce
1/4 cup water
to taste chili crisp
8 oz noodles (spaghetti or rice noodles)

Grind up the salted peanuts.

Chop the scallions.

Grate the ginger.

Add ginger, half of the scallions, and three heaping spoonfuls of peanut butter to a bowl.

Add about two tablespoons of soy sauce to the bowl.

Add one teaspoon of sesame oil to the bowl.

Add two tablespoons of rice wine vinegar to the bowl.

Add a little bit of habanero for spice, and a little bit of chili crisp oil.

Whisk the ingredients together and add water until smooth.

Toast the sesame seeds until golden brown and set aside.

Rinse the noodles and heat them in the microwave or in a pan for about two minutes.

Mix the noodles with the sauce, toasted sesame seeds, and chopped peanuts.
