Sesame Peanut Noodles

8 oz fresh wheat noodles
1/4 cup peanut butter
2 tbsp sesame paste
1 tbsp white vinegar
1 clove garlic
1 tbsp roasted garlic puree
1 tbsp mirin
1 tbsp sugar
2 tbsp soy sauce
1 tbsp black vinegar
1/4 cup water
1 cup bean sprouts
1 cup cucumber, sliced
1/2 cup carrots, shredded
1/2 cup pickled mustard greens
2 green onions, sliced
1/4 cup cilantro, chopped
1 tbsp chili oil

Drop fresh wheat noodles into boiling water for about 4-5 minutes.

Make the sauce by combining peanut butter, sesame paste (or tahini), white vinegar, garlic, roasted garlic puree, mirin, sugar, soy sauce, and black vinegar in a bowl.

Whisk the sauce ingredients together until well combined.

Add a little water to the sauce to thin it out.

Test the noodles for doneness; they should be Al Dente.

Shock the cooked noodles in an ice bath and then let them dry.
