It showcases the fusion of Indian and Caribbean culinary traditions, with its origins tracing back to the indentured laborers who brought their culinary practices to the islands. This flatbread, filled with spiced split peas, is a staple in many households and is often served alongside curries and chutneys, embodying the rich flavors and communal spirit of Trinidadian cuisine.

Add washed dried split peas to boiling water with salt and turmeric.
Cook the peas for 25 to 30 minutes until fully cooked.
Sift flour to remove lumps and mix in salt, sugar, and baking powder.
Make a well in the center of the flour mixture and add warm water.
Knead the dough until well combined, being careful not to overmix.
Coat the dough with melted ghee and cover with a damp cloth; let rest for 30 minutes.
Drain excess liquid from the cooked split peas and mix in Shadow Benny, garlic, hot pepper, and roasted cumin powder.
Grind the mixture using a traditional mill grinder until smooth.
Divide the rested dough into six equal portions for 10-inch rotis.
Lightly coat each dough ball with melted ghee and cover with a warm damp cloth; let rest for 10 minutes.
Open up each dough ball, ensuring the center is not too thin, and fill with the split pea mixture.
Coat the filled dough with melted ghee and let rest for 20 to 45 minutes.
Roll out the filled dough as thin as possible without bursting it.
Transfer the rolled dough to a screaming hot tava, brushing with melted ghee before flipping.
