Clean and wash 2 kg mutton chops thoroughly.

In a pressure cooker, add mutton chops, 2 tablespoons ginger-garlic paste, 1 medium chopped onion, 1 teaspoon salt, and 1/2 cup water.

Mix the ingredients well, cover the pressure cooker, and cook on high flame until steam builds up, then lower the flame and cook for 8-10 minutes until the chops are tender.

Remove the chops and let them cool, then prepare the marinade in a bowl by mixing 3/4 cup yogurt, 3 tablespoons roasted gram flour, 4 tablespoons corn flour, and 2 tablespoons lemon juice.

Add 1 teaspoon crushed coriander, 1/2 teaspoon turmeric powder, 1/2 tablespoon red chili powder, 1 teaspoon chili flakes, 1 teaspoon chaat masala, 1 teaspoon garam masala, and 1/4 teaspoon food color to the marinade and mix well.

Coat each chop with the marinade and set aside for at least 30 minutes to 1 hour.

Heat oil in a pan over medium-low flame and fry the marinated chops until golden and crispy, turning occasionally.
