No Refined Sugar Oatmeal Cookies (Better than Granola Bars!)
Recipe Information
Oatmeal Cookies
Add 1/4 cup unsalted butter to a large bowl and microwave for about 40 to 50 seconds.
Add 1/4 cup honey, 1 teaspoon cinnamon, and a pinch of salt to the melted butter and mix well with a whisk.
Add the egg white from one large egg and whisk until incorporated.
Add 1 teaspoon vanilla extract and mix well.
Add 2 cups rolled oats to the mixture.
Add 1/4 cup chopped toasted almonds, 1/4 cup chopped toasted walnuts, and 1/3 cup chocolate chips to the oats.
Switch to a spatula and mix everything well, ensuring the liquid ingredients coat all the oats and mix-ins evenly.
Line a large baking sheet with parchment paper and use a 3-inch round cookie cutter.
Place about two tablespoons of the mixture inside the cookie cutter and press down firmly with the back of a spoon.
Twist the cutter and lift it up to leave a shaped cookie behind. Repeat until all the mixture is used.
Bake in a preheated oven at 350°F (180°C) for about 18 to 20 minutes, or until light golden brown.
Let the cookies cool and set completely on the baking sheet.
Run a spatula underneath the cookies to lift them off once cool.
