No baking required for these Delicious Butterscotch Oatmeal Cookies! | Yummy No Bake Cookies
Recipe Information
Oatmeal Cookies
Start by measuring 3 cups of oats (using a mix of quick oats and old-fashioned oats).
In a saucepan, add 1/2 cup (1 stick) of butter and turn the stove burner on to medium heat.
Add about 1/2 cup of peanut butter to the saucepan and stir slowly as it melts.
Add 2 cups of sugar to the saucepan, using a half cup measuring spoon to measure out four half cups.
Stir the sugar into the melted butter and peanut butter mixture.
Pour in 1/2 cup of milk and stir to combine.
Add a pinch of salt to the mixture.
Add 1 teaspoon of vanilla extract to the saucepan.
Sprinkle in 1/2 to 1 teaspoon of cinnamon, stirring to combine.
Once everything is melted and combined, add 1 cup of butterscotch chips to the mixture and stir until melted.
Prepare a surface with parchment paper for the cookies.
Pour the melted butterscotch mixture into the bowl of oats and mix well, scraping the bottom of the bowl to incorporate all ingredients.
Let the cookie mixture sit for a couple of minutes to thicken up.
Spoon the cookie mixture onto the prepared parchment paper.
Let the cookies set for 30 to 45 minutes at room temperature, or place them in the fridge for 15 to 20 minutes to speed up the setting process.
Once set, cut parchment paper to fit into an airtight container for storage.
