1/2 cup palm shortening
1 cup granulated sugar
1/2 cup packed brown sugar
1 egg
vanilla (about 2 teaspoons)
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon nutmeg (or more to taste)
1 1/2 cups quick oats
1 2/3 cups all-purpose flour
2 tablespoons molasses (or 1 tablespoon if preferred)

Mix together 1/2 cup of butter and 1/2 cup of palm shortening until soft.

Add 1 cup of granulated sugar and 1/2 cup of packed brown sugar to the mixture and mix well.

Add 3/4 teaspoon of baking soda and 1/4 teaspoon of salt, ensuring it is baking soda and not baking powder.
