Granola Oatmeal Cookies - The Chewiest Tastiest Oatmeal Cookie Ever - Food Wishes

Oatmeal Cookies
Start by preparing or buying granola, breaking it into small pieces.
Mix together 1 cup of granola, 1 cup of all-purpose flour, 1/2 teaspoon salt, 1/2 teaspoon baking powder, and 1/2 teaspoon baking soda in a bowl using a whisk for about 30 seconds.
In another bowl, cream together 1 stick of room temperature butter, 1/2 cup light brown sugar, and 1/2 cup white granulated sugar using an electric hand mixer on low speed, then increase to high until light and fluffy.
Add 1 large egg to the butter mixture and mix on high speed for about 30 seconds until emulsified.
Flavor the mixture with 1 teaspoon cinnamon and 1 teaspoon pure vanilla extract, mixing for a few seconds.
Switch to a spatula and add the dry ingredients to the butter mixture, mixing until the flour disappears.
Add 1/2 cup regular rolled oats and 1 cup granola to the mixture and mix until combined.
Scoop the dough onto a Silpat-lined baking sheet using a rounded tablespoon, placing 8 dough balls per pan.
Transfer the baking sheet to a preheated oven at 350 degrees Fahrenheit for 13 to 15 minutes until light golden brown with deeper browning around the edges.
Let the cookies cool on the pan for about 10 minutes before transferring them to a cooling rack.
