Wash the plantains and yam.
Peel the plantains.
Slice the plantains diagonally into thick pieces.
Prepare a rack for roasting.
Preheat the oven to 180°C (356°F).
Arrange the plantain slices on the rack.
Roast in the oven for 60 minutes, flipping halfway through at 30 minutes.
Heat olive oil in a pan.
Add onions to the heated oil, reserving some for garnish.
Blend and add pepper to the pan.
Add spices including curry powder, garlic, paprika, and salt to the sauce.
Stir well and cover to let it fry.
Check the plantains and yam during roasting to ensure they do not burn.
Prepare the sauce by adding the remaining onions before serving.
