Start by measuring 4 cups of all-purpose keto flour into a mixing bowl.
Add 2 teaspoons of salt, 1 teaspoon of baking powder, 2 teaspoons of curry powder, and 1 tablespoon of sugar to the flour and mix well.
Chop one orange bell pepper and one jalapeno pepper, and set aside.
Chop one yellow onion finely and set aside as well.
Heat a frying pan and add 2 lbs of ground beef, browning it thoroughly.
Once browned, add the chopped onion, jalapeno, and bell pepper to the beef in the pan.
Add minced garlic to the mixture without measuring, according to taste.
Chop 4 stalks of green onions and add them to the mixture.
Sprinkle in some dried thyme, and if using, a little beef bouillon powder and browning sauce.
Add 1 tablespoon of ketchup and 1 teaspoon of ginger paste, along with black pepper, and mix everything together.
Let the mixture cook until the vegetables are tender, then remove some for a dipping sauce.
To thicken the mixture, add xanthan gum and a little water, letting it simmer until it reaches the desired texture.
Let the beef mixture cool completely before proceeding to the dough preparation.
Chop 1 cup (8 oz) of frozen grass-fed butter into small pieces and set aside.
Measure out 1/2 cup of cold lard and chop it into small pieces as well.
Combine the chopped butter and lard with the flour mixture until it resembles small crumbles.
In a separate bowl, mix 1 egg with a little water to create an egg wash, then combine some of this with 3/4 cup of ice cold water.
Slowly add the ice cold water mixture to the flour mixture until it comes together to form a dough.
Wrap the dough in plastic wrap or cover it with a plate and refrigerate to chill.
Flour a surface and roll out the chilled dough.
Add the reserved half cup of butter to the rolled dough and fold it over, working the butter into the dough.
