1

Preheat the oven to 350°F (175°C).

2

In a mixing bowl, combine 3 cups of all-purpose flour, 2 teaspoons of sugar, 1.5 teaspoons of kosher salt, and 2 tablespoons of curry powder.

3

Add 2 tablespoons of beef tallow to the dry ingredients and mix with hands until crumbly.

4

Gradually add 1.5 cups of ice cold water, mixing until a malleable dough forms.

5

Knead the dough on a floured surface for about 1 minute, then wrap in plastic and chill in the fridge for 1 hour.

6

For the filling, heat a pan over medium-high heat and add blended oil to coat the bottom.

7

Add shredded carrot, shredded onion, and diced red bell pepper to the pan, cooking until softened, adding 1 tablespoon of salt to help sweat the veggies.

8

Add 1 tablespoon of diced scotch bonnet pepper, 1 tablespoon of garlic powder, 2 tablespoons of curry powder, 1 teaspoon of smoked paprika, and 1 teaspoon of ground allspice to the pan, cooking until fragrant.

9

Add 80/20 ground beef to the pan, breaking it down and cooking until browned, then add 2 tablespoons of pine nuts and 2 tablespoons of raisins, mixing well.

10

Let the filling cool down before assembling the patties.

11

Roll out the chilled dough on a floured surface to about 1 inch thick.

12

Cut out circles of dough using a ring cutter.

13

Place about 1 tablespoon of the cooled filling in the center of each dough circle.

14

Moisten the edges of the dough with water, fold over, and seal the edges by pinching or pressing with a fork.
