Originating from Turkey, Menemen is a beloved breakfast dish that showcases the simplicity and freshness of its ingredients. Traditionally enjoyed with crusty bread, it is often made with eggs, tomatoes, and peppers, reflecting the vibrant flavors of Turkish cuisine. Menemen is not only a staple in Turkish households but has also gained popularity in various forms across the Mediterranean and Middle Eastern regions, making it a cherished dish for brunch or any meal of the day.

Cottage cheese is lower in calories and ricotta is often less expensive.
Boil 5 eggs in an egg boiler or regular pot.
Prepare the tomatoes by cutting them into halves and removing the core.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a pan.
Add the halved tomatoes and sprinkle with salt, cover, and cook until the skin separates from the tomatoes.
Mash the cooked tomatoes with a masher.
In another pan, sauté 5-7 minced garlic cloves and 1 chopped onion until slightly cooked.
Mix the sautéed onion and garlic into the mashed tomatoes and cook for another 1-2 minutes.
Add salt, black pepper, and 1 teaspoon Kashmiri red chili powder to the tomato mixture and mix well.
Add approximately 1/4 cup of water to create a gravy-like consistency.
Arrange the boiled eggs in the tomato mixture, cut in half with the yolk facing up.
Add sliced long green chili on top of the eggs.
Sprinkle mozzarella cheese over the dish and garnish with fresh coriander and red chili flakes.
Cover and cook on low flame for 2-3 minutes until the cheese melts.
