Finely chop red onion and set aside.
Dice tomato into small pieces.
Blend three cooked tomatoes with half a glass of water until smooth.
Strain the blended tomato mixture to create a juice.
Add a teaspoon of finely chopped cilantro to the tomato juice.
Mix in oil to taste, about a teaspoon.
Add lime juice to the mixture and stir well.
Combine the strained tomato juice with the chopped onion and diced tomato.
Add chochos to the mixture and stir to combine.
Incorporate the cooked pork skin into the mixture.
Add green plantain chips to the bowl.
Season with salt and pepper to taste.
Drizzle with additional lime juice if desired.
Serve immediately, garnished with extra cilantro and lime.
