The marinade, known as mojo, is a vibrant blend of citrus and garlic, which infuses the pork with a unique flavor. Traditionally, this dish is associated with festive occasions, showcasing the rich culinary heritage of Cuban cuisine. Today, it enjoys popularity beyond Cuba, with variations appearing in many Latin American and Caribbean-inspired menus.

Brown the pork tenderloin in olive oil with salt and pepper until it gets some color.
Transfer the browned pork to a slow cooker.
Prepare the marinade by pressing garlic in a mortar and pestle with salt and pepper until it forms a paste.
Add chopped onions to the garlic paste.
Mix together 1 cup of orange juice and 1/2 cup of lime juice to substitute for sour orange juice.
Add dry oregano and fresh chopped oregano to the marinade mixture.
Combine all the marinade ingredients and mix well, then let it sit at room temperature for about an hour.
After an hour, pour the marinade over the pork in the slow cooker.
Add chicken broth to the slow cooker for additional liquid.
Cover and cook on low for 8 to 10 hours, or overnight if preferred.
Peel the yuca and ensure it is white and not discolored.
Boil the yuca in water with salt until soft.
Once soft, remove the stem from the yuca.
Prepare the sauce by heating oil in a pan until bubbling, then add garlic, lime juice, and salt, cooking for about 30 seconds until fragrant.
Plate the yuca and pour the sauce over it.
