Remove the knuckles from each drumstick.

Make 2 slashes each side.

Break the eggs in a bowl and whisk.

Boil a litre of water in a pan.

Place drumsticks into the boiling water and boil for 15 minutes. Remove and drain.

Place the drumsticks in a bowl, add the black pepper, cumin, cooking wine and salt. Mix well and leave to marinate half of an hour to an hour.

Roll each drumstick in the cornflour, ensure an even coverage.

Dip the floured drumstick into egg – ensure an even coverage, and then onto the breadcrumbs and roll – ensure an even coverage.

Repeat this with the rest of the drumsticks.

Heat 1-litre oil in the wok.

Place drumsticks into the hot oil, deep fry for 10 to 15 minutes on medium heat until golden.

Remove from oil and drain, Sprinkle with salt, place onto a dish and serve.
