Measure 1 cup of whole wheat flour into a mixing bowl.
Add 1 cup of all-purpose flour to the mixing bowl.
Add 1/4 cup of light brown sugar to the dry ingredients.
Add 1 teaspoon of cardamom and 1 teaspoon of black pepper for flavor.
Add 1 teaspoon of baking powder and 1 teaspoon of baking soda to the mixture.
Add 1/2 teaspoon of salt and stir the dry ingredients with a spatula.
In a separate bowl, combine 2 cups of buttermilk, 1/4 cup of maple syrup, and 2 tablespoons of molasses.
Mix the wet ingredients until smooth and bubbly.
Combine the wet and dry ingredients together until just mixed.
Add 1 cup of roasted pumpkin seeds, 1/2 cup of chopped pecans, 1/2 cup of dried cranberries, and 1 cup of chopped dates to the mixture.
Stir until all the goodies are incorporated into the batter.
Grease a terrine pan for baking.
Preheat the oven to 350°F (175°C).
Pour the mixture into the greased terrine pan and bake for about 50 minutes.
Check for doneness by inserting a skewer in the center; it should come out clean.
Let the loaf cool in the tin for about 30 minutes.
Turn the loaf out to cool completely on a wire rack.
Once cooled, chill the loaf to make slicing easier.
Use a serrated knife to slice the loaf as thinly as possible for crackers.
Arrange the slices on a parchment-lined baking tray, leaving a little space between them.
Lower the oven temperature to 300°F (150°C).
Bake the crackers for about 40 minutes, flipping them halfway through after 20 minutes for even crisping.
