Sesame and Pumpkin Seed Crackers

Sunflower seeds are a great nut-free alternative.
Add pumpkin seeds and flax seeds to a food processor and grind until the consistency is like cornmeal.
Add water and salt to the ground seeds to create a gluey paste.
Transfer the mixture to a bowl and let it sit for about an hour to absorb the water and become goopy.
After sitting, add sesame seeds and black sesame seeds to the mixture and mix well.
Divide the mixture in half for rolling out.
Use parchment paper on the bottom and cover with plastic wrap to roll out the mixture as thin as possible.
If there are holes in the rolled-out mixture, mash it back together.
Use a plastic ruler to score the dough into rectangles if desired.
Sprinkle a little more salt on top before baking.
Bake in the oven at 350°F for about 10 to 12 minutes until golden and crispy.
Once out of the oven, break the crackers apart along the scored lines while still hot.
