Cut the onion finely and peel and dice the Yukon Gold potato into small pieces.
Place the diced potato into a bowl of water to prevent oxidation.
Brown the ground turkey in a skillet with a little oil, breaking it into pieces with a spoon.
Add the chopped onion to the turkey and sauté for about 2 minutes until it begins to soften.
Add black pepper, turmeric, cumin, red pepper flakes, and salt to the turkey mixture.
Stir in the diced potatoes and add water to the skillet to help cook the potatoes until tender, about 15-20 minutes.
Cover the pot and allow the mixture to cook until the potatoes are tender and can be easily broken apart.
Remove from heat and let the mixture cool, then stir in chopped cilantro.
Prepare an egg wash by separating the egg yolk from the white, adding water, and mixing well.
Roll out the puff pastry on a floured surface and cut it into nine equal pieces using a pizza cutter.
Place a generous spoonful of the turkey and potato filling in the center of each pastry square.
Brush the edges of the pastry with the egg wash to help seal them.
Place another square of puff pastry over the filling and press the edges down to seal, using a fork to crimp the edges.
Optionally, trim the edges with a pizza cutter for a cleaner look.
Repeat the process until all the filling is used, making a total of 18 turkey puffs.
Place the filled puffs onto a baking sheet and brush the tops with the egg wash for a golden finish.
Bake in the oven according to the puff pastry instructions until golden brown and puffed up.
Allow the puffs to cool on a baking rack before serving.
