Cream room temperature butter and sugar together until light and fluffy.
Add the eggs to the butter and sugar mixture, mixing well after each addition.
Stir in the sorrel puree into the wet mixture.
Add dried fruits and adjust the amount based on preference for heaviness.
Mix in vanilla extract, almond flavor, rose water, and some reserved sorrel juice.
Combine dry ingredients including baking powder and mixed spices in a separate bowl.
Gradually add the dry ingredients to the wet mixture, using a cut and fold method until just combined.
Transfer the mixture into a greased baking pan, ensuring no air bubbles remain.
Bake the cake in a water bath, checking the temperature and time on the screen.
Once baked, drizzle red label wine over the hot cake.
