Add 2 1/2 teaspoons of quick rise yeast to the bottom of a stand mixer bowl.

Pour in 1/4 cup of warm water and add a pinch of sugar to feed the yeast.

Let the mixture sit for about 10 minutes until it becomes frothy.

After 10 minutes, add 1/2 cup of warm milk, 9 teaspoons of sugar, 1 teaspoon of salt, 1 teaspoon of vanilla essence, 1 whole egg, and about 25 mL of oil to the bowl.

Whisk the liquid ingredients together until well combined.

Add 2 1/2 cups of pre-sifted whole wheat flour to the bowl, one teaspoon at a time, scraping the bottom of the bowl as needed.

Knead the dough by hand until it feels soft and not too sticky, adding more flour if necessary.

Transfer the dough to an oiled bowl, toss it to coat with oil, cover with cling film and a tea towel, and let it rise in a warm place for 1 to 2 hours until doubled in size.

After the dough has risen, knead it again until smooth, then cut it into eight portions.

Flatten each portion into oblong shapes using your hands and a little extra flour to prevent sticking.

Heat vegetable oil in a pot to fry the beaver tails.

Stretch the dough manually instead of rolling it, using your fingers to twirl it in a clockwise or anticlockwise direction.

Drop a piece of dough into the hot oil to test if it's ready, then fry each beaver tail until golden brown, flipping with tongs as needed.

Remove the fried beaver tails and drain them on paper towels.
