In a stand mixer, combine whole wheat flour, oatmeal, salt, nutmeg, and dry yeast.

Add cocoa powder and vanilla extract, then mix again.
Sprinkle flour on a surface and knead the dough for 10 to 15 minutes.
Oil a bowl and place the kneaded dough inside, covering it with saran wrap and a damp cloth.
Let the dough rise in the oven with the light on for about an hour until doubled in size.
Separate the dough into two portions and roll each into a log shape.
Oil and flour a loaf pan, then place the shaped dough inside.
Cover the dough with saran wrap and a damp cloth, letting it rise for another hour.
Brush the top of the dough with melted honey and sprinkle with oatmeal.
Preheat the oven to 325°F (163°C) and bake for 15 to 20 minutes, placing water underneath the stove to retain moisture.
Remove the bread from the pan and cool on a wire rack.
