Combine 1 cup of water, 1 tablespoon of butter, 1/4 teaspoon salt, and 3/4 teaspoon cinnamon in a saucepan over medium heat.

Bring the mixture to a rolling boil.

Once boiling, reduce heat and add 1 1/4 cups flour, stirring vigorously until it forms a nice ball.

Let the dough rest for about 5 to 7 minutes.

Add 3 eggs one at a time, mixing well after each addition until fully incorporated.

Prepare a piping bag with the dough.

Squeeze the dough from the piping bag and cut it into desired lengths.

Heat 1 1/2 cups of vegetable or canola oil in a deep pan.

Fry the churros until they are nice and golden brown, then drain off the excess oil.

Place the churros on a paper towel and then coat them in a mixture of 1/2 cup sugar and cinnamon.
