3 cups rolled oats
1 cup chopped pecans
1 cup sliced almonds
1 cup coconut chips
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1 tablespoon vanilla
1/2 cup honey
1 teaspoon cinnamon powder
1/2 teaspoon salt
1 cup dried cranberries
1 cup chopped dried apricots
1 cup raisins
1/4 cup sunflower oil or grapeseed oil

Preheat the oven.

Add 3 cups of rolled oats, 1 cup of chopped pecans, 1 cup of sliced almonds, 1 cup of coconut chips, 1/2 cup of pumpkin seeds, and 1/2 cup of sunflower seeds into a bowl and mix them together.

Add 1/4 cup of sunflower oil or grapeseed oil to the mixture and mix well.

Scrape the seeds from 1 tablespoon of vanilla and add it to a separate bowl with 1/2 cup of honey, 1 teaspoon of cinnamon powder, and 1/2 teaspoon of salt. Mix this together.

Add the honey mixture into the oat mixture and mix until well combined.

Line a pan with parchment paper and spread the granola mixture evenly on it.

Bake the granola in the oven.

After about two-thirds of the baking time, take the granola out and mix it to ensure even baking.

Continue baking until done.

While the granola is baking, plump the dried fruits by soaking 1 cup of raisins and 1 cup of chopped dried apricots in rum or hot water for 3 to 5 minutes, then drain.

Three to four minutes before the granola is done baking, take it out, add the plumped dried fruits, mix, and return to the oven for the final three minutes.

Remove the granola from the oven and let it cool before serving.
