Preheat the oven to 400°F.
Melt butter in a cast iron skillet over medium heat.
Add minced garlic and sauté until fragrant, about 1 minute.
Stir in chopped shallots and cook until translucent, about 2-3 minutes.
Add white wine and simmer until reduced by half.
Incorporate chicken broth, lemon juice, thyme, bay leaves, salt, and black pepper.
Bring the mixture to a gentle simmer.
Place lobster tails in the skillet, flesh side up.
Drizzle olive oil over the lobster tails and sprinkle with red pepper flakes.
Transfer the skillet to the preheated oven.
Bake for 12-15 minutes, until lobster is opaque and cooked through.
Remove from oven and discard bay leaves.
Garnish with chopped parsley and lemon wedges before serving.
Serve directly from the skillet for a rustic presentation.
