Smoked Turkey

1 whole turkey (12-14 lbs)
2 tbsp hickory smoked salt
1 tbsp sugar
1 tsp ginger (grated)
1 tsp cumin
1 tbsp mustard
1 tbsp black pepper
1 tbsp granulated garlic
1 tbsp paprika
4 cups water (for soaking wood chips)

Prepare the turkey by checking for pin feathers and removing any plastic.

Brine the turkey in a mixture of water, hickory smoked salt, and sugar for 2 hours or overnight in the refrigerator.

Mix together a rub with ginger, cumin, mustard, black pepper, granulated garlic, hickory smoked salt, sugar, and paprika.
