Smoked Turkey

1 whole turkey (12-14 lbs)
4 cups wood chips (hickory or applewood)
2 tbsp salt
1 tbsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp smoked paprika
2 tbsp brown sugar

Prepare the turkey legs by rinsing them under cold water.

Pat the turkey legs dry with paper towels.

In a bowl, mix salt, black pepper, garlic powder, onion powder, paprika, and brown sugar.

Rub the spice mixture generously over the turkey legs.

Soak wood chips in water for at least 30 minutes before smoking.
