Smoked Turkey

Select a turkey in the 10 to 14 lb range, preferably around 12 lbs.

Brine the turkey overnight using the Pit Boss turkey brining kit or inject it for moisture.

Drain the brine, rinse the turkey, and pat it dry with a paper towel.

Place the turkey on a cookie sheet with a wire rack to allow moisture to drip out.

Tie the legs of the turkey together with bakers twine for presentation.

Season the turkey with Pit Boss Maple chipotle seasoning, coating both sides evenly.

Tuck the wings behind the turkey to prevent burning during smoking.

Preheat the smoker to 275°F (135°C).

Place the turkey in the smoker and smoke for about 3.5 hours, basting with melted butter mixed with the seasoning at the 1.5 hour mark and again at the 2 hour mark.

Check the internal temperature of the turkey at the 2 hour mark; it should be around 145°F (63°C).

Increase the smoker temperature to 300°F (149°C) after 3 hours to speed up cooking.

Continue to baste the turkey with melted butter every 30 minutes until the internal temperature reaches 167°F (75°C).

Remove the turkey from the smoker and let it rest for 15 minutes before slicing.
